Since I took the vegan pledge I have been trying find alternative products to milk that work just as well or even better in recipes. One of my best discoveries so far has been coconut milk on muesli and in porridge, it does have one prerequisite; you need to love coconut flavour. This breakfast will give a healthy start for a busy day and will not make you feel heavy or tired.
This recipe is enough for 1 person:
50g rolled oats (you can use other types of oats as well, just make sure they don’t have added sugar or sweeteners)
250ml coconut milk
1/2 tsp of cinnamon
1 tbsp of mixed seeds
a large handful of fresh blueberries or any other fruit/berry of your choice
On the previous night mix together coconut milk and oats, and keep them in the fridge. By morning they should be fully soaked. Gently warm them over low heat to get rid of any extra liquid. Remove from heat and add cinnamon and mixed seeds, allow to cool for a bit and then add blueberries. If you want a sweeter porridge drizzle with maple syrup, and enjoy!
